The third Science of Artisan Cheese conference is held on August 23-24 at North Cadbury Court in Somerset, England.
The conference will focus on themes relevant to the production of farmhouse cheese, directed to an international audience of cheese producers, public health regulators, scientists, and other members of the artisan cheese industry.
Highlights include:
- Information about the anti-Listeria properties of the microbial biofilms on wooden boards, and pointers for effective and safe use of boards in the dairy
- Updates on the latest research on VTEC (STEC), both its management within farm environments and its behaviour in cheese
- The latest news on progress towards a rapid and effective test for M bovis and the results of field trials done with SCA members since the last conference
- A focus on low-input farming systems for cheesemaking and the revival of rare breeds that suit them
- Crystals on washed-rinds: what causes them and why they are — structurally-speaking — amazing
